Overall, potatoes are a good source of vitamin B6, potassium, copper, vitamin C, manganese, phosphorus, niacin and dietary fiber. They also contain phytonutrients that act as antioxidants and the healthy compounds carotenoids, flavonoids and caffeic acid. One medium potato contains over half a milligram of the vitamin B6. While half a milligram isn’t much, it accounts for over a third of the suggested daily amount. This vitamin is needed for over 100 enzymatic reactions, and plays a role in maintaining brain, nervous system, and cardiovascular health.
