Start by slicing up some cherry tomatoes and garlic cloves. You can also add a little bit of fresh red chili. Cut thin slices which will make the dish cook even quicker. Finally, you slice an onion. Cut the tops and take the skin off the vegetable. Then cut paper-thin slices on the vertical.
Take a large-high-sided pan. Place your pasta in the bottom, then put onions on both sides of the pan. Put cherry tomatoes on both sides of the pan and your garlic and chili. Finally, tear off some basil and scatter them in and around the pan. Drizzle with olive oil, season with salt & pepper, and add your liquid. He uses regular water.
Turn on the heat and let it cook down for about 10 minutes. Stir continuously with tongs. The pasta and onions will soften and the tomatoes will blend into a delicious sauce.
Finish it off with some fresh grated cheese. When it’s done season with some freshly cracked black pepper and some extra cheese – parmesan works wonders.
