Pasta
- Five ounces angel hair pasta
- 1/4 cup extra virgin olive oil
- One teaspoon crushed garlic
- One 28-ounce can tomato sauce
- One 28-ounce can crushed tomatoes with basil
- Six basil leaves, chiffonade
- One teaspoon Kosher salt
- One pinch crushed red pepper
- One teaspoon dried oregano
Meatball
- Three pounds ground beef, 80 percent lean
- 1/2 yellow onion, small dice
- One tablespoon fresh parsley, chopped
- One teaspoon crushed garlic
- Two eggs
- One tablespoon plain seltzer
- One teaspoon Kosher salt
- 1/2 cup Italian breadcrumbs
- 1/4 cup pecorino romano cheese
- One tablespoon Worcestershire sauce
- Parmesan, for garnish
