This Mouthwatering Treat Is Perfect For Summer. The Best Part Is There Is No Baking Required…

Even though it’s been a bit cloudy with a slight chill in the air where I live, there have been enough warm, sunny days that I feel comfortable saying summer is finally here! I don’t know about you, but when I think of summertime, I can’t help but think of orange creamsicles. Was I conditioned over the years by the bells of the ice cream truck every summer? Perhaps, but I could care less – if an ice cream truck comes my way in the summer, you better believe I’m walking away with that creamsicle!

Unfortunately, as much as I love them, I’m kind of sad to admit that it’s been a while since I had a creamsicle. Maybe it’s just part of getting older, but I swear there are less ice cream trucks these days, aren’t there? Plus, the tendency of the classic creamsicle to leave a runny mess all over your arm well before you could ever finish it is one part of childhood I’m ok with leaving behind.

I can’t even tell you how happy I was when I found this recipe for orange creamsicle bars that bring back all those childhood memories without the mess! It doesn’t even require any baking, and makes for the perfect summer treat.


To make the bars, you will need the following:


  • 1 and 1/2 cups of graham crackers, crushed
  • 1/2 cup butter, melted
  • 2 tblsp. sugar

Creamsicle Filling:

  • 1 and 1/2 cups of cream cheese
  • 14 oz. condensed milk
  • 1/3 cup sugar
  • 2 tblsp. orange zest
  • 1 cup orange juice
  • 1/2 tsp. orange extract
  • 1/3 cup of powdered sugar
  • 1 cup heavy whipping cream

Combine the ingredients for the crust in a small bowl and mix to combine. Then, line a baking tin with foil and cover the bottom evenly with your crust mixture. Set aside in freezer to set. In another bowl, mix cream cheese, condensed milk, and sugar, then add in orange juice, zest, and extract. In a separate bowl, mix whipping cream with powdered sugar, and fold this into the rest of the filling mix until well combined. Pour out the entire thing on top of your previously made crust and freeze. Once set, cut into bars and garnish with orange slices.
